An upright storage fridge is the back-of-house workhorse of most commercial kitchens. Here's how to choose the right one.
1. Choose the size
Single door models usually hold around 500 to 650 litres. Two door and split four door models go well past 1,000 litres for busy kitchens. Think about how much stock you hold between deliveries.
2. Full doors or split doors?
Split (half) doors let staff open only part of the fridge, so less cold air escapes during busy service. Full doors make it easier to load large trays and bulk stock.
3. Measure your space
Measure the width, depth and height, plus doorways and corridors on the delivery path. Leave a gap around the unit for airflow, because a unit that can't breathe works harder and wears out sooner.
4. Climate rating and food safety
Check the maximum ambient temperature in the spec table, and choose a tropical-rated model if your kitchen or bar runs hot.
Australia's Food Standards Code requires chilled food to be kept at 5°C or below. Set the thermostat accordingly and check the temperature regularly, especially during busy service when doors open often.
